Campfire Roasted Vegetables

Ingredients:

1 hd broccoli

1 ea zucchini

1 ea summer squash

1 ea Red bell pepper

1/2 ea onion

3 cloves garlic chopped

1 Tbl chopped fresh oregano

1 Tbl. Vampire Repellent seasoning

1/4 stick butter

    This recipe was developed on an open fire, but a gas grill is going to be implemented. Preheat it on medium low setting. Tear off the roll two large pieces of aluminum foil to use as a vessel. Cut the broccoli in nice sized florets, and the remaining vegetables into about 3/4 inch slices. Toss all the veggies in olive oil including the garlic.

    Season with chopped oregano and heavily with salt and pepper. Arrange in a pile on the tinfoil, the cut butter across the top of the whole mixture. Fold the foil around and seal in the veg. Cook over low heat for about 20 minutes. Perfect to let hang on the cold side of the grill while you do other cooking.
